Cruffin 
alla cannella e sciroppo d'acero




siamo in autunno finalmente... adoro questa stagione,

i colori cosi'caldi i spaori i profumi e tutto ciocche questa stagione offre ti fa sentire coccolata e poi dopo tanti gelati, granite e altro...ricominci a gustare i dolci da forno con quei profumi che si sprigionano lentamente per tutta a casa mentre tu accocolata sul divano con una bella tazza di te ti godi anche la pioggia!

e quindi ricominciamo !

il forno, questa settimana sta avendo un gran da fare...dopo i cornetti  dell'Mtc della settimana scorsa ecco a voi i cruffin proposti dal contest di Re-cake di settembre.
Il mio ingrediente principale sarà' per questo mese la cannella riscoperta dopo il mio viaggio negli States, non il primo, ma questa volta osservato con occhi diversi!
Decisamente molto buoni...un po'lunghi nel procedimento ma tanta soddisfazione dopo!

ingredienti:

150g di farina 0
150g di farina00
6g lievito di birra disidratato
10g di sale fino
130g di acqua tiepida+30g( 2 cucchiai) per eventuali aggiunte
50g di burro non salato, ammorbidito e tagliato a cubetti
165g di burro non salato a temperatura ambiente


procedimento:


Due ore prima di cominciare a preparare l'impasto, uscire  i 165 g di burro non salato fuori dal frigo e fatelo ammorbidire a temperatura ambiente.
Nella planetaria, oppure, in una ciotola abbastanza capiente, mescolate le due farine, la 0 e la 00, il lievito e il sale.
Aggiungete 130g di acqua tiepida e impastate ad una velocità bassa per 3 minuti.
L'impasto deve essere leggermente ispido e rigido, ma se si ha difficolta'a tenerlo unito aggiungete i 30g di acqua e impastate nuovamente.
Unite i 50g di burro tagliato a cubotti e impastate per altri 10/15 minuti, dovete ottenere un impasto liscio ed elastico.
mettetelo a riposare coperto con da una una pellicola trasparente, per 40/45 minuti a temperatura ambiente.

trascorso il tempo, trasferite la pasta su una superficie leggermente infarinate e dividetela in 4 parti uguali.
Lavorate una porzione alla volta e coprite il resto con la pellicola trasparente.
Spolverate la pasta con la farina in modo che non si attacchi, poistendetela fino ad ottenere uno spessore di 1 cm.
Con la macchina per la pasta( nonna papera) nella misura grossa, inserite la pasta, passatela piegatela a meta'e passatela un'altra volta.
Infarinate la pasta su ambo i lati e iniaziate a tirarlacon la macchina fino raggiungere la misura piu'sottile ( la pasta deve diventare sottilissima)
Per evitare che si attacchi spolverate il piano di lavoro con della farina e stendetela per tutta la sua lunghezza
Ora, con le dita, strofinate delicatamente un sottile strato di burro a temperatura ambiente( deve essere molto morbido ma non fuso) su tutto l'impasto, fino a bordi. Fate i calcolo che ogni striscia e'1/8di pasta , pertanto dovrete usare 1/8 del burro.
in questo caso la mia ricetta prevede l'utilizzo della crema alla cannella e sciroppo dácero.
Stesso procedimento come per il burro, aiutandovi con un pennello alimentare spalmate la crema sulla pasta, senza eccedere nella quantità.

Fate questo per entrambi le sezioni della pasta.
Una volta terminato, iniziate ad arrotolare l'impasto di una striscia da un estremo all'altro, il più' stretto possibile, ottenendo un trinchetto saldo.Posizionate il rotolo su unáltra estremita'di striscia imburrata e rotolate di nuovo
Ora tenete da parte il trinchetto cos'ottenuto e fatelo stesso passaggio con le altre strisce.
Alla fine vi ritroverete con 4 rotoloni di pasta.
Prendete ognirotolino e tagliatelo a meta'nel senso della lunghezza, prendeteuna striscia cos'ottenuta e con il lato tagliato verso l'esternoarrotelo come a formare un nodino e infilate le estremità's otto.
Posizionate i nodi ottenuti all'interno di una teglia per muffii imburrata.
Ripetere il processo con le altre porzioni di impasto. cosi'facendo dovreste ottenere 8 cruffin...io due in più'...ancora non ho capito come!
Se si sta facendo questo il giorno prima, si puo'avvolgerela tagliano la pellicola e lasciare in frigo.
In caso contrario, copritela con della pellicola trasparente e lasciatela a temperatura ambiente per 2/3 ore fino al raddoppio.
Cucinate in forno preriscaldato a 200'gradi per 25 minuti, fino a quando si gonfiano e si dorano ( non spennellare con uovose si vuole spolverarli di zucchero a velo)
lasciate raffreddare sulla gratella.

questa ricetta ha una leggera nota sapida.
Se si vuole chetai piu'dolce, ridurre il sale a 1/2 cucchiaino, quindi aggiungere due cucchiai di zucchero all'impasto.

invece dello zucchero a velo, si possono rotolare i cruffin nello zucchero.

per il cinnamon filling

166g di burro non salato a temperatura ambiente
159g di zucchero di canna
20g di cannella in polvere
20g di sciroppo d'acero
2 uova
20g di farina
2 cucchiai di estratto di vaniglia


procedimento


in una planetaria lavorate il burro con lo zucchero di canna ad velocita'moderata per 2 minuti.
con una spatola grattate il fondo della ciotola affinche'lo zucchero non si depositi nel fondo della ciotola.
Unite al composto di burro e zucchero la farina, la cannella e lo sciroppo d'acero, lavoratelo per altri 2 minuti sempre ad una velocità moderata.
In un'altra ciotola sbattete le uova con l'estratto di vaniglia e unitelo al composto lavorando il tutto per altri 2 minuti.
il risultato del composto dovrà' risultare liscio e abbastanza corposo, come una crema.
trasferite la crema in un contenitore e lasciatela riposare a temperatura ambiente per un'ora, poi riponete la ciotola in frigo, coperta, per tutta la notte se si può'!


ingredients 

150grams (1 cup+ 1tbsp) bread flour
150 grams (1 cup+ 1tbsp) all purpose flour
6 grams ( 1 1/2 tsp) instant dry yeast
11grams (1 1/2 tsp) salt
130grams (1/2 cup) luke-warm water +30 grams (2 tbsp) for adjustment
50grams (3 1/2 tbsp) unsalted butter, soften and cubed
165grams (11 1/2 tbsp) unsalted butter, room temperature.


filling cinnamon

166g of butter melted
160g Brown sugar
20g cinnamon powder
20g maple syrup
20g all purpose flour
2eggs
2 tbsp of vanilla extract


instructions

Put the melted butter and brown sugar in the bowl of a mixer fitted with a paddle attachment. Mix for 2 minutes on low speed, making sure to periodically scrape down the bowl

Combine the flour, cinnamon and honey, then add to the bowl of the mixer and continue mixing for 2 minutes on low speed, continuing to scrape down the bowl

Combine the eggs and vanilla in a separate bowl, then add to the butter mixture and mix for 2 minutes on low speed, continuing to scrape the bowl periodically

Transfer to a container to cool at room temperature for 60 minutes. Cover and refrigerate overnight




instructions



2 hours before starting the dough, leave 165 grams ( 11 1/2 tbsp) unsalted butter on the counter for it to completely come to room temperature
In a stand mixer bowl with dough hook (or large bowl with hand-held mixer with dough-hooks), whisk tighter bread flour, all purpose flour, instant dry yeast and sal until even.
Add 130 grams of warm water (95f/35c) and knead on low speed for 3 minutes.
The dough should be slightly shaggy, and stiff, but if it has difficulty coming tighter, add the additional 30 grams of water and knead again.
Then add 50 grams of cubed unsalted butter and knead on low speed for 5 minutes until completely incorporate.
then increase to medium speed and knead for another 10/15 minute until the dough is extremely smooth and elastic. Cover with plastic wrap and let rest for 40/45 minutes a room temperature. It should expand slightly.
Transfer the dough to a lightly floured surface, and divide into 4 equal portions.
Work with 1 portion at a time and cover the rest loosely with plastic wrap. Dust the dough with just enough flour so it doesen't stick, then roll it into 1/3"(1 cm) thickness. With a pasta machine at its thickest increment, feed the dough thought the machine once, then feed it back again but this time, overlap 1 end of the dough over the other and run the seam thought the machine so it sticks/connects tightly tighter. You should have a continuos ring of dough going trough the pasta machine like a conveyor belt. This saves you the trouble/time of refeeding the dough back into the machine after each increment.
Now dust both the inner/outer side of the dough with a bit of flour, then start running the dough trough the machine, continuously, until you reach the thinnest increment(should be paper-thin). Gently avoid any crinkling or folding of the dough during this process, laying it neat and flat on the counter. Now cut the dough loose where it's close to the machine, then run to release the dough from the machine.
the dough will be very long, so you may need to cut it in half and keep it unfolded and laid flat on the counter. Now with your fingers, gently rub a thin layer of the room temperature butter evenly across the dough, extending all the way to the edges. Do this to both sections of the dough if you had to cut it in half. Just keep unmanned that this is a 1/4 of the entire dough from one end to the other, as tightly as you can, into a firm log.Place the log on one end of the other buttered section of dough, and roll it up again.Now, cut the log in half length-wise with a floured knife, then with the cut-side facing outward, twirl it into a semi knot and tuck the ends underneath itself. Place the knots inside butter muffin-pan. Repeat the process with the other 3 portions of the doughs and butter.If you are doing this the day before, you can wrap the entire muffin-pan with plastic wrap and leave it in the frigate this point. If not, cover the pan loosely with plastic wrap and let proof at room temperature for 2/3 hours until fully doubled in size.
bake in a preheated oven at 400F/200C, for 25 minutes until puffed and golden browned. Let cool slightly on a cooling-rack, then dust with powdered sugar.

  1. Che belli Patrizia ^^ sono proprio un inno all'autunno i tuoi cruffin! La cannella devo dire che non mi fa impazzire, me lo sciroppo d'acer sì, quindi visto che oggi li ho rifatti per la terza volta penso che qualcuno lo proverò irrorato dallo sciroppo! una abbraccio, chiara

    Ora, io mi trovo in un dilemma terribile: sto aspettando la fine della dieta e mettendo da parte una serie di ricette che voglio fare per allora. Ma se mangio tutta quella roba... dopo una settimana dovrò ritornare a dieta!!!! Qui occorre trovare un equilibrio... e anche un modo per inserire queste delizie nel mio post-dieta!!!! :-D
